Polish cuisine in the mouth of a foreigner
Polish cuisine? Tasty, full of variety and veery filling.
Traditional Polish specialities are indeed real calorific bombs, but to visit Poland and not to taste a giant pork chop with cabbage is like going to Italy and not trying a spaghetti or pizza.
Soups
Żurek –sourdough-based, with potatoes, sausage or eggs, sometimes served in the loaf of bread
Beetroot soup - prepared from red beetroots, with vegetables; served with “uszka” (small dumplings filled with meat or mushrooms)
Chicken broth - stock from boiled chicken meat and vegetables, served with pasta. The Poles' favourite soup for a Sunday dinner.
Side dishes
Lard - Though this kind of side-dish may astonish you, break your fear and let yourself be surprised by the great flavour of this Polish delicacy. Made from salo or bacon, with onion and marjoram, sometimes also with apples or dried plums. Served with bread and pickled cucumbers.
Grilled oscypek – cheese made from sheep milk, typical for Polish mountain regions. Often served with cranberries.
Meat and meat dishes
Pork chop - coated cutlet made from pork meat
Bigos - tasty dish on the basis of cabbage, with vegetables, mushrooms, pieces of sausage and smoked meat; a traditional Polish dish.
Gołąbki - ground beef meat with rice, wrapped in cabbage leaves
Vegetarian dishes
Dumplings - something like Italian ravioli; with a variety of fillings: cheese with potatoes and onion (Russian dumplings), cabbage with mushrooms, or fruit
Pancakes - flour dish, served with jam, fruit, cottage cheese, etc.
Knedle - potato rolls with a fruit filling, usually with plums
Potatoe pancakes - made from grated potatoes and enriched with a sweet or spicy filling. Popular name for potato pancakes with meat sauce is “pancakes in a highland robber's style”
For a dessert you, it's a must to taste Polish cakes – dark, spicy gingerbread, famous Pope's cream cakes, beigli or cheesecake.
And as a final touch: what is culinary Kraków famous for? First of all, for crispy bagels (mind you, pretzel is something different), sold on each corner of the Old Town. Very popular are also ice-creams on ul. Starowiślna, where a one-kilometre long queue will always form, so this is again a great opportunity to use the time for practising Polish:).
Also, impossible to be on Kazimierz and not to eat a delicious zapiekanka with chives, for example, at “U Endziora”. And at night, grilled sausages at Hala Targowa as well as a variety of bars with “oh-so-Polish” kebabs wait for ravenous party animals.
Opinions
I am listening to the CD I got from you and I would like to thank you once again, not only for the CD, but for the two weeks I spent in Kraków! Thanks to you I had a fresh and thorough look at the extraordinary place. Unfortunately, two weeks are not enough to explore the whole city, and that's why I'm all the more happy about my next visit. Right now I know that if I need any information about Kraków's cultural or night life, I have someone to turn to.
